Coconut Butter

I like to add a bit of coconut butter to make these mashed bananas thick and creamy. Coconut butter is made from pureed coconut flesh. It has a consistency similar to almond butter. Coconut butter shares very similar health benefits to creamed coconut. It’s high in B vitamins, copper, and manganese3. The Vitamin B family is famous for its energy-boosing effects on the body. Additionally, coconut butter is a great source of fiber. This versatility ingredient is perfect for dishes, desserts, smoothies, and more!

Ceylon Cinnamon

Ceylon cinnamon is a larger, tan-brown cousin to the more common cassia cinnamon. It also has a milder flavor compared with regular cinnamon. I love using this aromatic spice in my recipes. It also comes with a host of health benefits!

Ceylon cinnamon is rich in antioxidants that protect your cells from free radical damage. It also contains anti-inflammatory and antimicrobial components. Certain enzymes found in Ceylon cinnamon help your body metabolize glucose more efficiently4. This may be helpful for those who want to better balance their blood sugar.

How To Enjoy Mashed Bananas

These Cinnamon Mashed Bananas are easy to make and fun to eat! Simply warm up the banana, add your coconut butter and Ceylon cinnamon, and mash until you reach your desired consistency. 

You can enjoy this scrumptious treat as a snack or as a topper for breakfast foods, such as Tigernut Waffles. You could even place it in the freezer for a healthy, frozen “nice cream”!

Ingredients

  • 1 banana
  • 1 tbsp coconut butter
  • 1 dash cinnamon to taste

Instructions

  1. Heat banana on skillet over low-medium heat, in the oven (350 degrees F), or in the microwave until banana is warm and tender.
  2. Once tender, place the banana in a small bowl. Add coconut butter and cinnamon. Use a fork to mash the banana with the coconut butter and cinnamon until smooth.

Notes

Optional: Top with additional cinnamon and/or spoonful of coconut cream (such as the Coconut Cream Vegan Chocolate Mousse).
