When a craving for chocolate cake strikes, I’ve got you covered! This flourless chocolate cake uses a few simple ingredients and comes together in approximately an hour. Perfect for special occasions or a weekend treat, this decadent dessert is sure to impress without all the stress!

Dairy Free Flourless Chocolate Cake

Traditional cakes use flour and eggs to provide structure to the cake. These ingredients also act as leaveners, which help give cake that light and fluffy texture. This dairy free flourless chocolate cake is denser and more fudgy. That’s what makes it so scrumptious!

The addition of coconut milk, applesauce, and vegan chocolate makes an irresistibly fudgy base. The flax eggs also help hold in moisture. You won’t believe how decadent and rich this dairy free flourless chocolate cake is! Flax Egg

Traditional cakes use eggs to help bind the other ingredients together. It also gives the cake structure and keeps the cake moist. For this flourless chocolate cake, we’re using a flax egg instead. Flax eggs help you achieve the same moisture and structure in your dairy free chocolate cake. 

Flax eggs are rich in fiber, polyphenols, and alpha-linolenic acid (ALA). Polyphenols fight unhealthy inflammation in the body. ALA is a type of fatty acid that supports healthy heart function. Fiber is also important to maintain gut health. It also plays a role in managing blood sugar and blood pressure levels. Flax eggs are also a good source of protein and B vitamins. 

Making a flax egg is easy. All you need to do is combine one tablespoon of flaxseed meal with two and a half tablespoons of water. Let it sit for a few minutes to allow the mixture to thicken. Since we’re making two flax eggs, we’ll simply double the measurements!

How To Make Flourless Chocolate Cake

Ingredients to make Flourless Chocolate Cake - Amy Myers MD®

Grab your apron and let’s get baking! Preheat your oven to 350 degrees Fahrenheit. Pull out an 8-inch cake pan and line it with parchment paper. You can also grease the sides to help the flourless chocolate cake come out easier.

Mixing the Flourless Batter

Warm the coconut milk up in a small saucepan over medium heat. Remove from the heat just as it’s beginning to bubble. Stir in the vegan chocolate until it’s smooth and melted. You can set this aside for a moment so it can cool slightly.

Combine the almond flour, Double Chocolate Paleo Protein powder, and arrowroot starch in a small bowl. Add the baking powder and sea salt and whisk until mixed. Now you can make the flax eggs. Mix the flaxseed meal with water and set aside for three to five minutes. This allows it to thicken.

In another bowl, whisk together the applesauce, melted chocolate, flax egg, coconut sugar, and vanilla extract. Mix well. Pour the wet mix into the dry ingredients and stir to incorporate. Don’t overmix, though! You want a smooth batter that just comes together.

Baking the Cake

Pour the batter into the prepared cake pan. You can use a spatula to smooth out the top. Bake your dairy free flourless chocolate cake for 35-40 minutes. You’ll know it’s ready when an inserted toothpick comes out with minimal crumbs.

Take the cake out of the oven and let cool in the pan for about 15 minutes. This helps it not stick as you transfer it to a cooking rack. For best results, serve warm or at room temperature. Feel free to garnish this gluten free chocolate cake with dusted cocoa powder and fresh raspberries. Enjoy!

Ingredients

  • 1 cup coconut milk 
  • 1 cup chopped vegan chocolate 
  • 2 ½ cups almond flour 
  • 2 scoops Double Chocolate Paleo Protein 
  • ½ cup arrowroot starch 
  • 3 teaspoons baking powder 
  • ¼ teaspoon sea salt 
  • 1 ½ cups applesauce 
  • 2 Flax eggs (2 tbsp flaxseed meal + 5 tbsp water)
  • ½ cup coconut sugar 
  • 1 teaspoon vanilla extract

Directions

  1. Preheat your oven to 350°F (175°C) and line an 8-inch cake pan with parchment paper. Lightly grease the sides to ensure an easy release. 
  2. Heat the coconut milk in a small saucepan over medium heat. Once it starts to bubble (don’t boil!), remove from the heat and add the chopped vegan chocolate. Stir until it’s completely melted and smooth. Set aside to cool slightly. 
  3. In a large bowl, combine the almond flour, Double Chocolate Paleo Protein, arrowroot starch, baking powder, and sea salt. Whisk until evenly mixed. 
  4. Make the flax eggs by mixing flaxseed meal and water together and let sit for 3-5 minutes to thicken. 
  5. In a separate bowl, whisk together the applesauce, coconut sugar, vanilla extract, flax egg, and melted chocolate. Stir until smooth and combined. 
  6. Pour the wet mix into the dry ingredients, stirring gently. 
  7. Pour the batter into your prepared cake pan and smooth the top with a spatula. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs. 
  8. Allow your cake to cool in the pan for about 15 minutes before transferring it to a wire rack. Serve warm or at room temperature for the best flavor. 
  9. Garnish with a dusting of cocoa powder, and enjoy!
