Coconut Milk Latte

Using coconut milk to your dandelion root tea is a delicious way to add a rich, creamy texture. It also gives it a subtle tropical flavor. I also love coconut milk because it is the perfect dairy free substitute! The coconut milk provides healthy fats for proper blood sugar balance. Additionally, the apricots add a hint of sweetness. 

Coconut milk comes in a variety of packaging. When looking for coconut milk, stay away from plastic containers. These can leach toxic chemicals into the coconut milk. Even paper cartons contain PFAS, forever chemicals that can disrupt your hormones. While glass is ideal, you can settle for canned coconut milk as long as it’s BPA free. Make sure the coconut milk is organic and free from gums, fillers, and artificial preservatives. 

How To Make Dandelion Root Tea

Making a Dandelion Root Cafe Latte has never been easier! First you need the star ingredient, which is dandelion root tea. It’s so convenient to simply run to the store and grab a box of dandelion root tea off the shelf. However, keep quality in mind. Many conventional teas contain pesticides that trigger inflammation. Loose leaf teas may be better, as long as they’re organic. Also, look for teas that come in eco-conscious packaging. Skip the plastic and look for repurposed paper or other natural material. You may also be able to find teas at your local farmers market.

What if you want to make your dandelion root tea from scratch? For those who really want to take it to the next level, you may be able to gather your own dandelion roots and make the tea yourself! Can you use the dandelions growing in your front lawn? Maybe, if you know for sure that they haven’t been sprayed with any fertilizers, pesticides, or other chemicals. Dig up the dandelions, wash the roots, then cut them into 1-2 inch sections. Dry or roast them for a deeper, richer flavor. 

Whichever method you use, bring a small pot of filtered water to a boil. Once it reaches a boil, turn the stovetop off and place your dried dandelion root tea into the water. Let steep for 10-15 minutes.  Remove the tea bags or dandelion roots and strain the tea into the blender. Add the vanilla extract and coconut milk and blend until smooth. Pour into your favorite glasses and enjoy!

Ingredients

  • 2 bags Roasted Dandelion Root Tea
  • 3 cups filtered water
  • 2 pitted/apricots, pitted
  • 1/8 tsp vanilla extract
  • 1/2 cup full fat coconut milk

Instructions

  1. Add water, roasted dandelion tea bags, and dates to a small pot over high heat. Allow to come to a rolling boil, then turn off heat and allow to sit for ten to fifteen minutes.
  2. Remove tea bags from the water and discard. Add all ingredients to a high speed blender. Blend until smooth and creamy.
  3. Pour into two glasses and serve warm.
