Dried Apricots

Dried apricots are a low-sugar fruit that works well for healthy snacks. They also carry an impressive nutrition profile! Dried apricots contain vitamins A, E, and C. Your body uses these antioxidants to support eye, heart, and liver health. They also contain essential minerals such as potassium and magnesium to assist with healthy blood pressure. Some research suggests dried apricots also have liver-protective properties. This comes in handy during detoxification and other metabolic processes. Getting rid of toxins frees up your cells to focus on energy production. That’s partly what makes these energy balls that much more effective!

Dried apricots are one of the foundational pieces in this snack masterpiece. I use them in combination with coconut flakes and tigernut butter.  Make sure to buy organic dried apricots as these are not treated with sulfur vapors. The results leave you with a darker color and chewier texture.  

Tigernut Butter

Tigernuts are gaining popularity as a Paleo-friendly way to incorporate more nutrients into your diet! Contrary to the name, tigernuts aren’t actually a nut. They’re small tubers that grow underground. Rich in fiber, tigernut butter helps you feel fuller for longer. This encourages more intentional snacking throughout the day. They also contain healthy monounsaturated fats, similar to what you’d find in avocados and olive oil. 

Tigernut flour is a popular wheat flour alternative to many baked goods. In addition, you can also use tigernut butter! Tigernut butter simply grinds up the tubers until it turns into a spread. It’s a powerhouse ingredient I love adding to snacks and other recipes. Tigernut butter has a rich, creamy consistency helps hold these prebiotic fiber energy balls together.

How To Make Prebiotic Fiber Energy Balls

Ingredients to make Prebiotic Fiber Energy Balls - AMMD™

These prebiotic fiber energy balls couldn’t be easier to make! Grab a small bowl and place the dried apricots inside. Add warm, filtered water to the bowl. Soak the dried apricots for about 10 minutes to soften them. Once time is up, drain the water and place the softened apricots in a food processor.

Using a spatula or spoon, add the tigernut butter. Follow with your tigernut flour and cocoa powder. Last but certainly not least, add a scoop of Prebiotic Fiber Complete™ to the mix. Blend on high speed until you reach a smooth consistency.

Next we’ll add the coconut flakes and cocoa nibs. As you pulse the mixture, you’ll notice a dough start to form. Keep pulsing until all the ingredients are well incorporated.

With clean hands, grab pieces of dough and roll it into a small ball. A good rule of thumb is about one tablespoon measurements. Place the rolled balls onto a parchment-lined tray and chill in the refrigerator for at least 30 minutes. This will help them firm up.

When you’re ready to enjoy them, simply grab and go! You can also store them in an airtight container in the fridge for up to a week.

Prebiotic Fiber Energy Balls

Ingredients

  • 1 1/2 cups dried apricots, soaked for 10 minutes 
  • 1 scoop Prebiotic Fiber Complete™ 
  • 1/2 cup tigernut flour
  • 1 cup tigernut butter 
  • 1/2 cup coconut flakes 
  • 3 tbsp cocoa powder
  • 1/4 cup cocoa nibs 

Directions

  1. Add the dried apricots to a small bowl and soak them in warm water for about 10 minutes. This softens them and makes them easier to blend.
  2. Drain the apricots and place them in a food processor. 
  3. Add the tigernut butter, tigernut flour, cocoa powder, and Prebiotic Fiber Complete™  to the processor. Blend until smooth and fully incorporated.
  4. Mix in the coconut flakes and cocoa nibs and pulse until the dough comes all together. 
  5. Using your hands, roll the mixture into small balls (about 1 tablespoon each) and place them on a parchment-lined tray. 
  6. Refrigerate the energy balls for 30 minutes to firm up. Store them in an airtight container in the fridge for up to a week. Enjoy!
