Keep in mind that adding matcha is optional, especially if you are avoiding caffeine and following The Myers Way® or an AIP diet closely.
How To Make Oreo Mint Cookies
Step 1: Prepare the Gluten Free Oreos Dough

Start by preheating your oven to 325°F (160°C) and lining a baking sheet with parchment paper.
In a large mixing bowl, whisk together almond flour, cocoa powder (or you can choose carob powder for an AIP friendly option), baking soda, and sea salt.

Next, add in melted coconut oil, monk fruit sweetener, and vanilla extract, stirring until a dough forms. If the mixture feels dry, gradually add water—one tablespoon at a time—until it holds together.
Once the dough is ready, roll it into a ball and place it between two sheets of parchment paper. Using a rolling pin, flatten the dough to about 1/8-inch thickness. Grab a round cookie cutter (approximately 2 inches in diameter) and cut out your cookies.

Carefully transfer them to your prepared baking sheet, re-rolling any leftover dough to maximize your batch.

Bake for 8-10 minutes, or until the cookies are firm. Then, allow them to cool completely on a wire rack—this is key, as they will crisp up as they cool!
Step 2: Make the Dairy Free Oreo Filling
While your Oreo Mint Cookies cool, it’s time to whip up the creamy mint, dairy free oreo filling. In a small bowl, mix together coconut butter, coconut oil, peppermint extract, Leaky Gut Revive®, powdered monk fruit sweetener, and a touch of matcha for color and antioxidants.

Stir until smooth, then adjust the sweetness and mint flavor to your preference.

Step 3: Assemble Your Oreo Mint Cookies
