It’s a childhood favorite that many of us still crave. However, as delicious as they are, traditional Oreos are packed with highly processed ingredients, refined sugars, dairy, and gluten. This makes them far from gut-friendly or AIP-compliant! The good news? I’ve created the perfect gut nourishing version of Oreo Mint Cookies that’s just as satisfying, without the inflammatory ingredients.

Gluten Free Oreos

Traditional Oreos are made with processed flours and refined sugars, which can contribute to inflammation and digestive distress. For my Oreo Mint Cookies, I use almond flour, a nutritious and naturally gluten free alternative that provides a slightly nutty flavor and the perfect texture.

For that deep chocolatey taste, I opt for unsweetened cocoa powder, which is rich in antioxidants. To keep this recipe fully AIP-compliant, you can swap cocoa powder for carob powder, which has a naturally sweet flavor and is gentle on digestion.

To sweeten this cookie, I choose monk fruit. This sweetener is zero-glycemic, meaning that it won’t spike blood sugar levels or contribute to inflammation. The result? A slightly sweet chocolate cookie that forms the foundation of this healthier take on traditional Oreos.

Dairy Free Oreo Filling

The classic Oreo filling is loaded with processed vegetable oils, artificial flavors, and food dyes. For my Oreo Mint Cookies, I created a creamy, dairy free alternative using coconut butter and coconut oil. These healthy fats provide a rich, smooth texture while nourishing your gut and promoting sustained energy.

A little bit of matcha adds a lovely green tint and a slight earthy undertone that pairs beautifully with the refreshing mint flavor. Matcha green tea benefits include promoting a healthy inflammatory response and supporting your metabolism. It also provides calm focus, all thanks to its natural L-theanine content. Matcha is also rich in antioxidants which helps protect the body from free radicals, supports immune function, and promotes healthy skin. Keep in mind that adding matcha is optional, especially if you are avoiding caffeine and following The Myers Way® or an AIP diet closely.

How To Make Oreo Mint Cookies

Step 1: Prepare the Gluten Free Oreos Dough

Start by preheating your oven to 325°F (160°C) and lining a baking sheet with parchment paper. 

In a large mixing bowl, whisk together almond flour, cocoa powder (or you can choose carob powder for an AIP friendly option), baking soda, and sea salt.

Next, add in melted coconut oil, monk fruit sweetener, and vanilla extract, stirring until a dough forms. If the mixture feels dry, gradually add water—one tablespoon at a time—until it holds together.

Once the dough is ready, roll it into a ball and place it between two sheets of parchment paper. Using a rolling pin, flatten the dough to about 1/8-inch thickness. Grab a round cookie cutter (approximately 2 inches in diameter) and cut out your cookies.

Carefully transfer them to your prepared baking sheet, re-rolling any leftover dough to maximize your batch.

Bake for 8-10 minutes, or until the cookies are firm. Then, allow them to cool completely on a wire rack—this is key, as they will crisp up as they cool!

Step 2: Make the Dairy Free Oreo Filling

While your Oreo Mint Cookies cool, it’s time to whip up the creamy mint, dairy free oreo filling. In a small bowl, mix together coconut butter, coconut oil, peppermint extract, Leaky Gut Revive®, powdered monk fruit sweetener, and a touch of matcha for color and antioxidants.

Stir until smooth, then adjust the sweetness and mint flavor to your preference.

Step 3: Assemble Your Oreo Mint Cookies

Once your Oreo Mint Cookies have fully cooled, it’s time to put them together! Spread about ½ to 1 teaspoon of the mint cream filling onto the flat side of one cookie. For an extra polished look, use a piping bag to evenly distribute the filling.

Then, gently press another cookie on top to create a sandwich. Repeat this process until all of your cookies are assembled.

For the best texture, place your finished Mint Oreo Cookies in the refrigerator for 15-20 minutes to allow the filling to set.

Ingredients

For the Chocolate Cookies:

  • 1 cup almond flour 
  • 1/2 cup unsweetened cocoa powder 
  • 1/4 teaspoon baking powder
  • Pinch of sea salt
  • 1/4 cup coconut oil, melted
  • 2 tablespoons monk fruit 
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon filtered water (if needed for the dough)

For the Mint Cream Filling:

  • 1 cup coconut butter, softened
  • 1 scoop Leaky Gut Revive® 
  • 4 tablespoons coconut oil, melted
  • 2 teaspoons peppermint extract (to taste)
  • 2 tablespoons powdered monk fruit sweetener or stevia, to taste
  • 1 tbsp matcha green tea for coloring

Directions

Prepare the Cookie Dough

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.

  1. While the cookies are cooling, prepare the filling. Combine the coconut butter, coconut oil, peppermint extract, Leaky Gut Revive®, powdered monk fruit, and matcha in a small bowl. Mix until smooth. Adjust sweetness and peppermint flavor to your liking.

Assemble Your Mint Oreos

  1. Once the cookies are completely cool, take one cookie and spread about 1/2-1 teaspoon of the mint cream filling onto the flat side.
  2. You can use a piping bag to create an even filling.
  3. Top with another cookie, pressing gently to create a sandwich. Repeat with the remaining cookies and filling.
  4. Place the assembled Mint Oreo Cookies in the refrigerator for 15-20 minutes to allow the filling to set.
  5. Serve chilled for the perfect texture and flavor!
