Zoodles

Those following an elimination diet or The Myers Way® know to avoid gluten. Most noodle bowls contain traditional noodles made from wheat. While other gluten free noodles can contain inflammatory ingredients such as corn. Instead, this noodle bowl uses spiralized zucchini. You may also know them as zoodles, and they're a fantastic gluten free alternative! Zoodles offer a similar texture and look as traditional noodle bowls. What's more, they’re an excellent way to support your health.

This chicken bowl uses both spiralized carrots and zucchini. Carrots are a rich source of vitamin A and beta carotene, an important nutrient in eye health. Zoodles nourish your body with plenty of vitamin C, fiber, and B vitamins. Vitamins C and A support healthy immune and cellular function. 

Fiber encourages healthy gut function. Good gut health also equals optimal immunity. After all, up to 80% of your immune system resides in your gut. A healthy gut helps your immune system ward off viruses and other seasonal illnesses!

Vitamin C is one of the best nutrients for immune support. It helps protect your skin against environmental stressors by scavenging free radicals. Neutrophils and other phagocytic cells use vitamin C to attack microbes and pathogens. 

The ginger used in this recipe contains gingerol. Gingerol is a bioactive compound that fights fungal and bacterial infections. The cilantro used as garnish has a detoxifying and cleansing effect. This unique, versatile herb contains a flavonoid called quercetin. Quercetin helps ward off oxidative stress caused by free radical damage. Some studies suggest cilantro may also support healthy mood and sleep. 

You also get the added benefits of avocado and radishes. Avocado is rich in omega-3 fatty acids, as well as lutein and beta-carotene. Radishes are another powerful immune protector. Its bold red color indicates its rich vitamin C content. Radishes contain a compound called isothiocyanates, which may impact cancer growth.

How To Make Green Chicken Bowl with Zoodles

Making this green chicken bowl with zoodles is a breeze. Since most of the ingredients are raw, you only need to cook the chicken. Then, you create the sauce and assemble the spiralized veggies into bowls.

We’re going to make the sauce first by placing the avocado oil, lime juice, and cilantro in the food processor. Add the garlic and sea salt. Follow up with Liposomal Curcumin, and Liposomal Vitamin C.

Blend until you reach a smooth and creamy consistency. Feel free to adjust any of the seasonings to your liking.

Next, heat avocado oil in a large skillet over medium heat. Add the diced onion and sauté for two to three minutes. Once the onions soften, add the garlic and cook for another minute. 

Place the raw chicken in the skillet and sprinkle with sea salt. Cook until the chicken is thoroughly cooked through, about eight to ten minutes.

While the chicken cooks, prepare the zoodles by spiralizing the zucchini. Spiralize the carrots next. Divide equal portions of spiralized veggies into your serving bowls. Top the zoodles with generous amounts of radishes and avocado. Add the cooked chicken bits.

Ingredients

Zoodle Bowl:

  • 1 tbsp avocado oil 
  • ½ medium onion, diced 
  • 3 cloves garlic, minced 
  • 1 ½ pounds boneless, skinless chicken breasts, cut into 1 inch pieces
  • ½ teaspoon sea salt 
  • 2 carrots, spiralized 
  • 2 zucchini, spiralized 
  • 1 avocado, sliced
  • Radishes, sliced
  • 1 lime, cut into wedges
  • Cilantro

Lipisomal Curcumin and Vitamin C Sauce:

Directions

  1. Combine the cilantro, avocado oil, lime juice, sea salt, Liposomal Curcumin, Liposomal Vitamin C,  and garlic in a blender or food processor. 
  2. Blend until smooth and creamy. Adjust seasoning as needed. Set aside. 
  3. Heat a large skillet over medium heat and add the avocado oil. 
  4. Add the diced onion to the skillet and sauté for 2–3 minutes, stirring frequently until softened. 
  5. Toss in the minced garlic and cook for about 1 minute, until fragrant. 
  6. Add the chicken and sprinkle with sea salt. Cook, stirring occasionally, for about 8–10 minutes, or until the chicken is cooked through and golden brown on the outside.
  7. While the chicken cooks, spiralize the zucchini and carrots and divide the spiralized veggies evenly among your serving bowls.
  8. Top each bowl of zoodles with the radishes, avocado and cooked chicken.
  9. Drizzle generously with the Liposomal Curcumin and Liposomal Vitamin C Sauce and garnish with lime wedges and cilantro.
