As the last few weeks of winter blow through, it’s tempting to stay indoors to ward off the cold. This Creamy Beet Soup is a hearty, comforting meal that will keep you going. It features a flavorful combination of red superfoods, Spanish onion, and celery. I also add lime juice, coriander, and cumin for a bold twist.
I wanted to make this beet soup exceptionally delicious. I also wanted to add extra gut, joint, and immune support! This is where the full fat coconut milk and Spectrum 5 Collagen come into play. I’ll share more about that in a moment. First, however, let’s talk about all the amazing benefits of beets!
Benefits of Beets
Beets are among the most beneficial red superfoods out there. This hearty root vegetable supports healthy energy and performance like nothing else can! One of the many benefits of beets is their nutritional content. Loaded with copper and inorganic nitrates, beets are famous for supporting healthy energy levels. They also contain folate, which supports healthy blood pressure levels.
Another of the many benefits of beets is their ability to fight off free radical damage. Rich in antioxidants, beets can help your body fend off oxidative stress and retain a more youthful, energetic state. They add the most beautiful color to this beet soup. If you want to experience the energy you had in your prime, these red superfoods are for you!
Full Fat Coconut Milk
Coconuts grow in warm climates and are highly nutritious. Younger, green coconuts produce full fat coconut milk, which is a rich source of vitamins, minerals, and healthy fats. If you’re trying to watch your weight, you may wonder if you can substitute for low fat coconut milk. While full fat coconut does contain more saturated fat, it affects your body differently than processed saturated fats. In fact, research shows these fats are easier for your body to digest and use. This can promote neurologic health, among other benefits.
Full fat coconut milk also contains caprylic acid, a powerful ingredient in fighting off yeast overgrowth. It also contains immune-boosting properties that help your body ward off infections. The medium-chain triglycerides (MCTs) found in coconut milk may also support healthy muscle building. It’s no wonder I chose to use full fat coconut milk to thicken this creamy beet soup!
Apple Cider Vinegar Benefits
Adding a few tablespoons of apple cider vinegar really brings this beet soup to another level. The tart and tang pairs well with the lime juice. In addition, it helps balance the more robust flavor of the beets. Did I mention there are numerous apple cider vinegar benefits out there? In fact, there are many that it’s hard to know where to start.
People have used apple cider vinegar for its medicinal and cooking properties. Made by fermenting apples, this type of vinegar may help balance blood sugar levels, as well as aid in healthy weight loss. Some people also take it to increase stomach acid naturally. One of the main apple cider benefits is a bioactive compound called acetic acid. High-quality apple cider vinegar will also contain ‘the Mother’. This is a substance made up of enzymes, proteins, and beneficial bacteria.
Collagen Protein
Aside from all the benefits of beets, the co-star of this beet soup is collagen protein. There are five types of collagen proteins available to us. Your body uses protein to build and repair tissue, including muscles, skin, and joints.
My Spectrum 5 Collagen powders feature all five collagen protein types in their most bioavailable forms. I also use the four best animal sources of protein you can find! From grass fed bovine to chicken bone broth, this hydrolyzed formula ensures optimal absorption. I also include hydrolyzed fish collagen and egg membrane powder. Adding two scoops to this savory beet soup is a no-brainer in my opinion. After all, this multi-dimensional collagen powder supports healthy ligaments, hair, nails, and so much more!
How To Make Beet Soup
Better health never tasted so good, and I think you’ll agree with this beet soup. In a large pot over medium heat, warm up your avocado oil. Add your chopped Spanish onion and sauté for three to four minutes. Once it’s golden brown and fragrant. Add the rest of your seasonings. This includes the garlic, ginger and coriander. Follow up with cumin, black pepper, and sea salt. Continue cooking for another two to three minutes.

Add your roughly chopped beets and celeriac pieces to the rest of the ingredients and stir to combine. Add the apple cider vinegar to the bone broth and pour into the pot. Bring the pot to a gentle boil, then reduce the heat to a simmer. Cover with a lid and cook for 20-25 minutes. It’s ready when all the vegetables are fork-tender.

Remove from the heat and stir in two scoops of Spectrum 5 Collagen. Add the full-fat coconut milk and blend together. An immersion blender or high speed blender works best for this. We’re after a creamy, puréed look. For a zesty finish, add the lime juice.

Ladle the beet soup into your favorite bowls and garnish with freshly chopped cilantro and parsley. Want to share it with your social circle? Make it picture-perfect by drizzling a bit of coconut milk or a few slices of avocado oil on top.

If you’re over 40, have a chronic condition, or simply want to improve your health, you need to up your protein intake. Spectrum 5 Collagen makes it easy with a palatable flavor and hydrolyzed formulation. Add it to smoothies, baked goods, or sauces for a boost of whole-health support!
