Gluten Free Crostini

If you’re unfamiliar with what a crostini is, it’s simply small slices of toasted bread. In fact, the word crostini is Italian for “little toasts”. Typical breads contain gluten and are off-limits for those following The Myers Way® or other AIP protocols. That said, we’re going to use a gluten free baguette in this recipe.

The good news is that there are many gluten free breads available today. When shopping for a gluten free baguette, look for one with an almond or cassava flour base. Avoid brands that contain soy, dairy, gums, and fillers. Also, check to make sure they don’t contain any legumes. These include peas and lentils.

Chocolate Spread

Let’s face it, life wouldn’t be the same without chocolate. However, conventional chocolate spreads often contain inflammatory ingredients that can irritate your gut such as sugar and dairy. This dairy free chocolate spread is just as delicious without the harmful ingredients. It’s also simple to make!

Strawberry Pistachio Crostini

Ingredients

  • 1/2 cup plain coconut yogurt
  • 2 tbsp coconut butter
  • 1 scoop Collagen + Probiotic
  • 1 cup strawberries diced
  • 1/4 cup pistachios chopped
  • 1/4 cup fresh mint leaves chopped
  • 1 loaf gluten free baguette cut into 1/4" thick slices

Instructions

  1. Slice and toast baguette and let cool
  2. Combine coconut butter, coconut yogurt, and Collagen + SBO Probiotic in a bowl
  3. Spread a light layer on each crostini
  4. Top with strawberries, pistachios and mint
